Roasted Pepper and Goat Cheese Sandwich

INGREDIENTS

– 2 slices multigrain or sourdough bread
– 1 ½ ounces goat cheese
– 1 handful arugula or watercress
– Juice from ¼ lemon
– ½ large roasted bell pepper
– Fresh ground pepper

Cheese Sandwich

INGREDIENTS

– 1 ½ ounces goat cheese

– 1 handful arugula or watercress

– Fresh ground pepper

PROCEDURE

1. Toast bread
2. In a bowl, toss arugula or watercress with lemon juice
3. Spread equal amounts of goat cheese on each slice of bread
4.Top one half with chopped roasted peppers, then a handful of arugula or watercress, a few turns of fresh ground pepper and cover with the other slice of bread.
Slice and enjoy!
